When you add the hydrochloric acid to the mossy zinc you will create zinc chloride (ZnCl2) and Hydrogen gas (H2). If you light a match and place it over the test tube you will hear a pop. The pop happens because the hydrogen gas is combustible. If you really wanted to be one hundred percent positive as to the identity of the gas you would have to collect some of the gas and run it through a gas chromatography-m spectrometer, but since you know the starting materials the match stick test will do just fine.
